21 Day Fix Mexican Lasagna

 

This Mexican Lasagna is 21 Day Fix approved, super easy, delicious and family friendly. What’s not to love? This fed our family for a couple days and will be a new addition to our rotation for sure!

Ingredients:

1 red and 1 orange bell pepper, diced
1 onion, diced
1 lb ground turkey
3 tbsp 21 day fix southwest seasoning
6 blue containers shredded cheese
2 red containers refried beans
2 small cans diced chilies, drained
2 tsp evoo
12 corn tortillas

Directions:

Preheat oven to 375.

Heat oil in large skillet. Add peppers and onions and cook until tender. Remove from skillet and set aside.

Add the meat to the skillet and brown until almost done. Add chilies and finish cooking through. Add cooked peppers and onions, southwest seasoning and 1/4 cup water. Simmer for 10 minutes.

Spray 9×13″ pan with cooking spray. Line the bottom with 6 tortillas. Top with 1 red container refried beans. Top with 1/2 of the meat mixture. Layer the remaining 6 tortillas, the remaining refried beans and the remaining meat mixture. Top with shredded cheese.

Bake for 30 minutes.

Makes 6 servings. 1 red, 1 yellow, 1 green, 1 blue.

Serve with salsa and Greek yogurt.

Bacon Cheeseburger Salad with Creamy Dijon Dressing

Bacon Cheeseburger Salad - 21 Day Fix Approved

I combined several different recipes together to create this “deconstructed” bacon cheeseburger salad with a creamy dijon dressing. It sounded delicious in my head but I wasn’t sure how it would turn out… well, I LOVED it! It totally satisfied my cheeseburger craving PLUS gave me an extra serving of greens which is definitely better than a side of fries! Plus, it is completely 21 Day Fix approved.

Ingredients:

1 lb lean ground beef (preferably grass-fed, organic)
6 slices uncured, nitrate-free, turkey bacon
1 small (or 1/2 large) red onion, finely diced
2 tsp Worcestershire sauce
1 tsp garlic powder
1 14.5oz can diced tomatoes, drained
1 cup shredded cheddar cheese
4-6 cups salad mix
1/4 cup 2% plain Greek yogurt
1.5 tbsp Dijon mustard
1.5 tbsp rice vinegar
2 tbsp extra virgin olive oil
salt and pepper to taste

Directions:

Cook turkey bacon in a large skillet. When done, remove from pan and allow it to cool slightly before dicing. Dice the turkey bacon and set aside.

Add the beef to the skillet and cook, breaking up the meat, until brown and cooked through. Drain the meat, if needed, and return to pan. Add turkey bacon, onion, Worcestershire sauce, garlic powder, and tomatoes to the skillet. Stir to combine, cover, and allow to simmer for 15 minutes. Season with salt and pepper, if desired.

While the meat is simmering, prepare the salad dressing. Combine yogurt, mustard, and vinegar in a bowl, mixing well with a fork or whisk. Slowly add the oil, whisking constantly, until blended. Season with salt, if desired.

Sprinkle the cheese over the top of the meat, recover for a few minutes, and allow the cheese to melt.

Divide greens and top with meat mixture and dressing and serve immediately.

Servings: 4-6
For 21 Day Fix: portion out the greens with your green container (roughly 1 cup), the meat mixture with your red container (roughly 3/4 cup) and the dressing with your orange container (you may only need 1/2 of the orange container worth of dressing).

Mashed Cauliflower – 21 Day Fix Approved

This clean recipe for mashed cauliflower is creamy and delicious, containers NO butter, and can be whipped up for a last minute side dish. Plus, it is 21 Day Fix approved.

Mashed Cauliflower

Ingredients:

16 oz cauliflower florets
2 tbsp Greek yogurt
2 tbsp goat cheese
1/4 tsp garlic powder
Fresh ground pepper, to taste

Directions:

Cook cauliflower until tender. Drain, return to pan, cover and allow to sit for 5 minutes.

Add cauliflower, Greek yogurt, goat cheese, and garlic powder to a food processor. Process until smooth and creamy.

Top with fresh ground pepper.

Depending on the size of your cauliflower, makes 2-4 servings.

21 Day Fix: portion out with your green container, I don’t worry about counting anything for the cheese or yogurt since it is such a small amount

21 Day Fix Turkey Chili

This chili is the recipe trifecta: healthy, easy, and delicious! I loved it, hubs loved it, and it was simple to make. This is the perfect fall dish. Top with shredded cheese, a dollop of Greek yogurt, and a couple whole grain tortilla chips for even more flavor! Yum!

Turkey Chili

Ingredients: 

1 tsp olive oil
1.5 lbs lean ground turkey
1 medium onion, chopped
1 bell pepper, chopped
3 cloves garlic, finely chopped
1 tbsp chili powder
1.5 tsp cumin
1/2 tsp sea salt
1/4 tsp cayenne pepper
2 15-oz cans black (or pinto) beans, rinsed and drained
1 15-oz can diced tomato (no sugar added), with liquid*

Optional:
Shredded cheese
Fresh cilantro, chopped
Greek yogurt
Whole grain tortilla chips, crushed

Directions:

Heat the oil in a large pan over medium-high heat. Add the turkey, onion, pepper and garlic. Cook, stirring occasionally, until turkey is no longer pink (about 5-8 minutes).

Add spices and cook, stirring constantly, for 1 minute.

Add beans and tomatoes, with liquid, and bring to a boil, stirring occasionally. Reduce heat to low, cover, and simmer for 15-20 minutes.

Serve and add desired toppings.

* I used a second can of diced tomatoes because mine were not very liquid-y and I desired more liquid in the final product (add additional 1/2 green)

Serves: 6, 1 cup per serving

21 Day Fix Approved: Eggplant Pizzas

21 Day Fix Grilled Eggplant Pizzas

 

These are SO easy and yummy! You could try them with any combination of toppings but this is what I did.

Ingredients:

1 large eggplant, sliced
2 large tomatoes, sliced
Provolone slices
Handful of fresh basil
1 small garlic clove
EVOO

Directions:

Slice the eggplants and lightly salt them. Lay them out on paper towels to drain for 30 minutes.

Meanwhile, prepare the sauce by processing basil, garlic, and a drizzle of EVOO in a food processor. Set aside.

Preheat grill pan and oven broiler.

Lightly brush the eggplant slices with EVOO. Grill the eggplants in a grill pan (or outdoor grill) for 2-3 minutes per side.

Top eggplant slices with basil mixture, provolone cheese and sliced tomato. Broil for a minute or two to melt the cheese.

For 21 Day Fixers: 1 green, 1 blue, and 1 tsp. Just be sure to divvy out your cheese so you don’t use too much!

21 Day Fix Extreme Turkey Lettuce Wraps

Another super easy recipe! I mixed up a batch of this turkey and had it for lunch all week. If you are following 21 Day Fix or the 21 Day Fix Extreme eating plan you could add some cheese on top, too.

For 21 Day Fix and 21 Day Fix Extreme:
1 red, 1 green

Ingredients: 

1.5 lbs raw lean ground turkey
1 tsp garlic powder
1 tsp cumin
1/2 tsp sea salt or Himalayan salt
1 tsp chili powder
1 tsp paprika
1/2 tsp oregano
1/2 medium onion, finely chopped
1/2 bell pepper, finely chopped
3/4 cup water
3/4 cup tomato sauce (no sugar added)
6 large lettuce leaves
1 medium tomato, chopped
Fresh cilantro, chopped

Directions:

Heat large, non-stick skillet over medium heat. Add turkey and cook, breaking up the turkey as it cooks, for about 5 minutes or until no longer pink.

Add the spices and mix well. Add pepper and onion and cook, stirring frequently, for 4 to 5 minutes.

Add water and tomato sauce and bring to a boil. Reduce heat to low and cook, covered, for 10 to 12 minutes.

Top each lettuce leaf evenly with turkey mixture, tomatoes and cilantro.

Makes 6 servings, 1 wrap per serving.

21 Day Fix Extreme Turkey Meatloaf

This is my kind of recipe: simple, healthy and super easy. Hubs approved, too, so this will become one of our regulars.

For 21 Day Fix and 21 Day Fix Extreme:
1 red, 1/2 yellow, 1/2 purple

Ingredients:

2 lbs raw 93% lean ground turkey
1 cup all natural salsa
1 cup cooked quinoa, cooled
2 large eggs, lightly beaten
3 garlic cloves, finely chopped
1 tsp sea salt or Himalayan salt

Directions:

Preheat oven to 375.

Combine turkey, salsa, quinoa, eggs, garlic and salt. Mix well by hand or with a rubber spatula. Place turkey mixture into a 9×5 loaf pan and smooth top with a rubber spatula.

Bake for 60 to 70 minutes or until internal temperature reaches 165. Let stand for 10 minutes before slicing into 8 slices and serving.

Servings: 8
Serving size: 1 slice

Prosciutto, Brie and Apple Quesadillas

I came across these on CL and knew I had to try them.  I am a cheese whore, what can I say? I had some prosciutto on hand and added it in and I thought it complemented the sweetness of the apple and the peppery arugula perfectly! These are simple and delicious and make a great lunch or light dinner. Leave off the prosciutto for a vegetarian option.

Ingredients:
1 tbsp Dijon mustard
2 tsp apple cider
3 10-inch tortillas
6 oz brie, rind removed and thinly sliced
1 Granny Smith apple, cored and thinly sliced
6 slices prosciutto
3 cups arugula
Freshly ground black pepper
Directions:
Combine mustard and cider in a small bowl, stirring well.
Heat a nonstick skillet over medium heat.
Spread each tortilla with the mustard mixture. Place 1 tortilla mustard-side-up in the pan. Arrange 1/3 of the cheese and prosciutto over the tortilla and cook until cheese begins to melt (about 1 minute). 
Arrange 1/3 of the apple slices over the top and 1 cup arugula. Sprinkle with freshly ground pepper. Fold tortilla in half and press lightly with a spatula. 
Cook 2 minutes on each side or until lightly browned. Repeat with remaining tortillas.

Spicy Chicken Rigatoni

This recipe is all over Pinterest but when one of my favorite people and blogger, Mrs. in Training blogged about it I knew I had to try it. Plus, I liked her changes better than the original recipe (which can be found here). The recipe is simple, spicy and delicious. I added plenty of extra red pepper flakes to ours since we like heat and I added a bit more of each of the sauces to make the final product saucier. In the future I think I will make this even easier by just adding pre-cooked shredded chicken instead of cooking the chicken in the sauce.

Ingredients:
1/4 cup olive oil
1 tbsp crushed red pepper
1/8 tsp salt
1/8 tsp ground black pepper
1 tbsp chopped garlic
6 oz uncooked chicken, chopped into 1″ pieces
1.5 cups bottled marinara sauce
1 cup bottled Alfredo sauce
2 tsp butter1 lb Rigatoni pasta, cooked according to package directions
Additional 1/2 tsp crushed red pepper, for garnish

  • Shredded Parmesan cheese, for garnish

Directions:
Set a large pot of water to boiling for the pasta.

In a saute pan, heat oil over medium heat. Add red pepper, salt, black pepper, and garlic and saute until fragrant about 1 minute. Add chicken and saute briefly to coat in the spices.

Add marinara sauce, then Alfredo sauce and bring to a simmer. Cook until sauce thickens slightly and chicken has reached an internal temperature of 165. While chicken is cooking, cook and drain the pasta.

Remove chicken and sauce mixture from heat, add butter, and stir to incorporate. Combine the cooked pasta and sauce in a large bowl, reserving the majority of the chicken to place on top of the pasta. Garnish with additional red pepper and Parmesan.

Grilled Indian Spiced Chicken with Tomato-Yogurt Sauce

I cannot believe it has been well over a week since I last posted. I have been so busy with work and life that I haven’t had time for things like grocery shopping or meal planning. But, things are beginning to calm down again. I have a couple leftover grilling posts from the end of the summer and then I cannot wait to get into fall foods like pumpkin bread and soups! We are also working on our upstairs bathroom renovation so I hope to have those before and after pictures up next month.
This is a delicious grilled chicken with a wonderful Indian tomato-yogurt sauce. Perfect for a fancy way to serve humdrum chicken over rice. The Indian flavors are warm and inviting mixed with the grilled chicken.

Ingredients:
Chicken
4 chicken breasts
1 1/2 tsp garam masala
Salt and pepper
Rice
1 1/2 cup brown rice
3 cups chicken broth
1 clove of garlic, minced
Sauce
1 tbsp olive oil
1/2 cup chopped onion
1 clove minced garlic
14 oz can crushed tomatoes
1 heaping tbsp garam masala
2/3 cup low-fat Greek yogurt
Salt and pepper, to taste
Cilantro, for garnish
Directions:
Make the rice by adding chicken broth, garlic, and rice to a pot and cooking according to the package directions.
Meanwhile, heat the grill to medium-high heat. Rub all sides of the chicken breasts with garam masala, salt and pepper. Grill the chicken on both sides until done. Transfer the cooked chicken from the grill to a plate and cover loosely with foil while you make the sauce.
To make the sauce, begin by heating the oil over medium heat and then add the onions. Saute for about 5 minutes until just beginning to brown. Add the garlic and stir, cooking for 1 minute longer. Reduce the heat to medium-low and add the tomatoes and garam masala. Stir occasionally until heated through. Add yogurt and remove from heat.
Serve the chicken over the rice and top with the sauce. Garnish with fresh cilantro.
